               The high phosphorous is good for root-building and the potassium is good for fruit weight. Sounds like you're ready for it.

               I understand the numbers we need to switch to but how does one obtain them using all natural products or is it possible, I currently use fish/seaweed ferts?

  Craig's 10-8-8 is delivered in many small plant available doses that won't upset the apple cart. If you still want 100% Natural sources look for mixtures of dried blood, bone meal & potassium sulfate. I doubt that a blend like this would be sprayable. Worse, it could take months to all become plant available.
